What I did this morning......

I was wanting to make some cookies this morning and I wasn't too sure what kind to make. My kids got quite a few chocolate and white chocolate bunnies for Easter from friends and relatives and I put most of them in the freezer.
So I decided to use a white chocolate bunny. Then I thought...hmm I want oatmeal and maybe dried cranberries too. So I started my google search and came up with these cookies from Ocean Spray.


INGREDIENTS:
2/3 cup butter or margarine, softened
2/3 cup brown sugar
2 large eggs
1 1/2 cups old-fashioned oats
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 6-ounce package Ocean Spray® Craisins® Original Sweetened Dried Cranberries
2/3 cup white chocolate chunks or chips

DIRECTIONS:
Preheat oven to 375ºF. Using an electric mixer, beat butter or margarine and sugar together in a medium mixing bowl until light and fluffy. Add eggs, mixing well. Combine oats, flour, baking soda and salt in a separate mixing bowl. Add to butter mixture in several additions, mixing well after each addition. Stir in sweetened dried cranberries and white chocolate chunks. Drop by rounded teaspoonfuls onto ungreased cookie sheets. Bake for 10-12 minutes or until golden brown. Cool on wire rack. Makes approximately 2 1/2 dozen cookies.

I often love to substitute in recipes and I did change a couple of things in this recipe. I added 1/2 c of whole wheat flour and 1 c all purpose flour instead of the 1 1/2 cups flour and added 1 tsp of vanilla to it too. The chopped up bunny measured exactly 2/3 c. And I used 3 packages of those snack size craisins equalling close to 3/4c.


Here is what they look like. They are quite tasty but I would probably flatten them slightly next time as they didn't really spread out.
